Turkish Cuisine: Köfte

How to make Köfte at home?


1 kg ground lamb
1/2 cup grated onion
1 teaspoon mint leaves
1/2 teaspoon black pepper
1/2 teaspoon oregano
1 minced garlic clove
1/2 teaspoon paprika (If you like, you can use hot paprika)
1/2 teaspoon cumin
Fresh parsley


Fist Step

You should get the grill heated to about 190°C. Place 4 pieces of foil-covered bricks (2 one side and 2 on the opposite side). Depending on how many persons you are, prepare enough number of wide, flat wooden skewers. The ingredients above are usually enough for 7 persons. So you can have 7 wide, flat wooden skewers.

Second Step

Get all the ingredients in a stand mixer and mix with a normal speed until the meat seems to be sticky. This will take around 4 minutes. Do not mix too much because you can lose the consistency if you do so.

Third Step

Get a bowl with warm water in it. You will use this bowl get your hands wet.

Fourth Step

Depending on how many flat wooden skewers you have, you should divide the meat mixture into that number of portions. In this case, divide the meat mixture into 7 portions. You should get your hands wet while doing this in order to prevent sticking.

Fifth Step

Form the meat around the wooden skewer. You can have 3-4 sausage-shaped meat in one skewer. You should flatten the meat after you get them sausage-shaped.

Sixth step

After you see that the grill is ready and heated enough, place each skewer on the grill. Remember that you should turn the skewers occasionally in order not to get the köfte burned. You should do it until you see that the meat is no longer pink in the middle. This will take around 7-8 minutes.

Seventh Step

Serve the köfte with onion salad, vegetables and yoghurt.
